Sweet Corn Cakes Recipe
Today I have got the Famous Corn Cakes for all of you .. Corn Cakes are generally referred to the bread that is made with Maize Flour but these are Fresh Sweet Corn Cakes which are so easy to make & totally loved by all especially children.
Corn is a grain which is used widely in Mexico & the United States of America in various forms. In fact it is the staple food of Mexico as most of us already know. High on fiber, it is very healthy for the gut & also has a decent amount of protein & minerals which are easy to absorb by the body.
This was a Recipe which I had thought of when on my visit to the USA I would invariably end up eating a lot of Mexican food which had a lot of sweet corn in it. The Salad, the Taco, Mexican Rice all used the sweet corn & it tasted Delicious.
It was at a small joint that my Husband had Sweet Corn Lamb Cakes & they did not have the Vegetarian option so I thought of making these Sweet Corn Cakes & they are no less Delicious 😃
So here’s the Recipe for Sweet Corn Cakes
- 1 cup sweet corn
- 1 cup maize flour ( makai atta )
- 1 cup chopped spring onions ( only the white )
- Half Red pepper chopped
- 2 teaspoon green chilies paste
- 3 teaspoon garlic paste
- Salt to taste
- Oil to shallow fry
Blend the Sweet Corn in the mixer but should be in bits & not a paste.
Mix all the ingredients in a bowl to form a soft dough like texture.
Now make small thick discs like a patty out of this.
Take a non-stick pan & brush with oil.
Shallow fry the corn cakes till they turn brown & crisp on both sides.
Serve hot as an appetizer or a snack with Salsa or any sauce of your choice.
