The Raw Mango Summer Drink

Aam Panna, the refreshing Indian summer drink made from raw green mangoes, is a beloved tradition in many households. With its tangy and sweet flavor, Aam Panna is the perfect remedy for the scorching heat of the summer months.

To make Aam Panna, start by either roasting raw green mangoes over an open flame until the skin is charred and the flesh becomes soft or simply boiling them for a quicker way. Let the mangoes cool, then peel off the skin and remove the pulp. Blend the pulp with water, sugar, salt, and roasted cumin seeds until smooth.

Some variations of Aam Panna include adding mint leaves which is my favourite way of having Aam Panna. You can also adjust the sweetness and tanginess of the drink to suit your taste preferences.

Ingredients 

  • 1 kg Raw mangoes 
  • 1 cup sugar/ jaggery powder / brown sugar 
  • 2 cups water for boiling
  • 1 tsp black salt
  • 3 tsp roasted cumin seeds coarsely crushed
  • 1 tsp black pepper powder 
  • 1 tbsp chaat masala powder 
  • 1 tsp raw mango powder/ aamchur 
  • 5 tablespoon fresh mint leaves
  • 3-4 cups chilled water
  • ice cubes to serve
  • Salt to taste 
  • few sprigs fresh green mint leaves to garnish
Method
  • Boil the washed mangoes with the skin on in a pressure cooker for 3 to 4 whistles
  • If you do not have a cooker, you can also roast the raw mangoes on a medium gas flame till the flesh becomes soft
  • Once the raw mangoes have cooled down, peel the mangoes & remove the pulp of the mangoes from the pit & set aside
  • Now blend the mangoes with the water in which they were boiled
  • Add the fresh mint, sugar, all the spices & salt
  • Add the chilled water & mix thoroughly
  • To serve, add the ice cubes in a glass, add the Aam Panna
  • Garnish with a few sprigs of Mint leaves / Pudina
  • Sprinkle some red chilli powder & serve immediately
