Bulgur Sprouts Salad

In my last post, I promised you more Recipes with the Nutritious Sprouts & here I am with an Ecstatic Salad Recipe which combines Bulgur Wheat & Sprouts with a Lebanese Flavour which is a Cuisine I am very fond of even being Vegetarian.

I have already given the benefits of Sprouts in my earlier post & the advantages of Bulgur Wheat are also manifold. Known as Dalia /Lapsi na fada it has been used in Indian Cuisine since ages & one more World Cuisine that uses the Bulgur Wheat a lot is the Lebanese.

When traveling to Europe, being a Vegetarian sometime you start looking out for some other options besides pizza & pasta. That’s when my love for Lebanese food started, although people think its mainly non Vegetarian, they have some Delicious Vegetarian Food.

This Bulgur Sprouts Salad is not only super Nutritious but also Amazing with so many flavors bursting together. I have added Pomegranate seeds ( another Lebanese Favourite ) spices like chili powder & cumin powder which make it really Robust.

So let’s get started with the Recipe for

Bulgur Sprouts Salad

Bulgur Sprouts Salad Ingredients 

 

  1. 1 cup bulgur wheat or Dalia or Lapsi na fada
  2. 1 cup Mung sprouts
  3. 1 cup pomegranate seeds
  4. 1 red Bell pepper
  5. 12 fresh Basil leaves
  6. 1 teaspoon Chilli powder
  7. 1 teaspoon cumin powder
  8. 2 teaspoon lemon juice
  9. Salt to taste
  10. 3 teaspoon Extra Virgin olive oil

Method

Boil the bulgur wheat in 2 cups of water, a pinch of salt & 1 teaspoon olive oil or pressure cook it for just one whistle till it cooks well & then cools it till the grains separate.

Lightly steam the Sprouts just for 2 minutes.

Apply oil on the Red Bell pepper & roast on a medium flame till the skin is charred, cool & chop it into small pieces ( if preferred simply chop & saute in olive to make it easier )

Take a mixing bowl & mix the bulgur wheat, sprouts, pomegranate seeds, chopped red pepper & Basil leaves.

Now add in the Red chili & cumin powder, lemon juice, & salt to taste.

Lastly, add the Extra Virgin olive oil & mix everything well.

Plate this Salad Beautifully & serve

You can serve it either warm or chilled as preferred.
