Thai Baby Eggplant Rice

Today is Friday & I was in such a weekend mood !!

Usually, we all have an urge to eat out on weekends but what about those days when your plan suddenly gets cancelled & you have to cook something impromptu !!

That’s precisely what happened today & I had to make something for dinner from whatever I had in the frig … So there started my digging into the refrigerator & I found I had some leftover cooked Brown Rice. It’s definitely not one of the things my hubby is crazy about so I had to think of making something really special to appease him. So I dug down further, haha !!

Baby Eggplant

& To my Delight, I came across some Thai baby eggplants which I had purchased from Godrej Nature’s Basket two days back & completely forgotten about them. Then there was also cooked corn & zucchini which are always present in my frig.

So I thought of making a Healthy Delicious Thai Rice with these ingredients, a kind which I had tasted in Koh Samui some years ago but of course, they had some different ingredients except for the Baby Eggplants !!

Thai Baby Eggplant Rice

So here’s the Recipe of My Quick Easy Recipe of THAI BABY EGGPLANT RICE !!

Ingredients for Thai Baby Eggplant Rice

  1. 2 cups Cooked Brown Rice
  2. 1 cup Baby Eggplants Sautéed
  3. 1 cup cooked corn
  4. A cup of Zucchini cubes
  5. Few Basil leaves
  6. 2 tbsp red chilli paste
  7. 2 tbsp oil
  8. 3 tbsp garlic paste ( can even add ginger garlic paste )
  9. 3 tbsp Coconut Milk
  10. Salt to taste

Method

  1. Heat oil in a pan.
  2. Add the garlic paste, cook for a minute & then add the red chilli paste.
  3. Cook for about a minute again.
  4. Add the sauteed Baby Eggplants, cooked corn, zucchini cubes & basil.
  5. Stir-fry for a minute.
  6. Add the cooked Brown Rice & salt.
  7. Mix everything well together & cook for another 2 minutes.
  8. Garnish with Coconut Milk & Fresh Basil leaves !!

Lo, behold… That wasn’t just a quick Recipe but a really Delicious & Healthy Nutritious dish I had ready in a jiffy!!

If you don’t have baby eggplants, don’t worry .. just substitute with some Indian Eggplants ( small ones) or just use any vegetables of your choice.

Cooking is all about passion for food & if you are passionate enough you will be able to conjure up any Recipe just as I did !!
