Zucchini Quickbread Eggless
Hii, today I am sharing one of my most liked recipe of a quickbread which is a cake-like bread, it’s a bread that tastes more like a cake and because it uses no Leavening ( like a yeast ) and it uses baking soda for rising, its called a quickbread
So here’s the recipe of my Zucchini Quickbread which is also eggless
You Need
- 1 cup zucchini grated ( with a large grater)
- Half cup apple grated
- 2 cups of All purpose flour (maida) or multigrain flour
- I cup brown sugar demerara / granulated white sugar
- 3/4 cup olive oil
- 1 1/2 cup of buttermilk ( 3/4 cup yoghurt n 3/4 cup water)
- 1 1/4 tsp baking soda
- 1tsp baking powder
- 1/4 tsp salt
- 1tsp vanilla extract
- 1/2 tsp cinnamon powder
- 1/2 cup of walnuts /almonds
Preheat the oven at 200 degrees C for 20mins
Mix all the dry ingredients like APL, baking soda, baking powder, salt, cinnamon.
Beat the olive oil n buttermilk together till mixed well, add the vanilla extract n then add the sugar n beat again for 3 min n then mix all the dry ingredients n beat for 2/3mins again n then mix in the zucchini, apple n walnuts /almonds with a spatula, take it out in a bread loaf mould or a 9″ inch pan which is lined with parchment paper or dusted well.
Bake for 50 to 60 minutes till a knife comes out clean when u pierce the bread.
I bake mine at 200 degrees C for almost an hour but every oven is different so pls keep checking after 45min.
Cover the top with a foil if u feel the top of the bread is getting burnt.
You can put some melted dark chocolate on it n decorate with rice crispies or anything else u like or just keep it simple, it is yummy anyway.
