Zucchini Koki with Amla Thecha


Phew… This has the whole of Mankind on its knees But I believe if GOD has given us this, there surely is something behind it. Maybe HE wants us to listen to Mother Nature, he tried to warn us in different ways but maybe we didn’t heed HIM. So He again wants us to recall that “The Reins are in My Hands”. Here I am sharing Zucchini Koki with Amla Thecha recipe, best recipe during Covid19. 

Let’s all combat this #Pandemic in a very patient & sensible way by staying safe & keeping everyone safe.

But we have to combat this dreadful disease by being Healthy & keeping our immune system very strong.
We definitely need to include more Nutritive & Super Foods ( definitely not the hyped & expensive ones ) in our diet.
And of course, it has to be delicious !!


So today, I am writing about this fave combination which uses two classic authentic regional dishes made in a little different manner to make it more Healthy.
The famous Sindhi Koki & the most loved Maharashtrian Thecha are two dishes that my family absolutely loves.
So, I just tweaked these a little to add some more nutrition to these.
So, finally made Zucchini Koki recipe with Amla Thecha for the fam & even the kids loved it which is always my measure to see if my healthy recipe worked !!

Adding Zucchini to the Koki ups it’s nutritional benefits & so this combination of a meal is an absolute winner.

Here’s the Zucchini Koki with Amla Thecha recipe 

Ingredients
  • 2 cups of wheat flour
  • 1 medium zucchini grated
  • 1 Onion chopped fine
  • 2 green chillies chopped fine
  • 1 teaspoon Cumin seeds
  • 2 tablespoons Chopped Coriander Leaves
  • Salt to taste
  • 2 tablespoons Ghee / Clarified Butter
  • Oil / Ghee for Cooking the Koki
Method
  • Mix all the ingredients except the oil in a bowl.
  • Add water & make a semi-soft dough.
  • Cover with a muslin cloth & keep aside for 10 minutes.
  • Heat a Tava / Griddle.
  • Make small balls of the dough & roll into semi-thick roti/disc.
  • Cook the Koki on the Tava both sides till tiny brown spots appear.
  • Apply a little oil/ghee on both sides & cook till well done.
  • Serve hot with the Amla Thecha or plain yoghurt & Chutney.

Zunichi

Recipe for Amla Thecha

Ingredients
  • 4 to 5 Amla grated or chopped very fine
  • 4 green chillies chopped fine
  • 1 teaspoon Cumin seeds
  • Half cup Finely chopped Coriander Leaves
  • Salt to taste
  • 2 teaspoon oil
  • 4 cloves garlic minced
Method
  • Heat oil in a small pan
  • Add the cumin seeds & allow to crackle
  • Add the chillies ( add more if you like very spicy ) & garlic
  • Lastly, add the Amla, coriander leaves & the salt
  • Cook on a high flame for a minute
  • The Amla Thecha is ready to be served
  • Serve with the Koki or any other snack of your choice
  • Store this in a glass jar for a week … If it does last that long !!
