Been a long time since I last posted a Recipe for all of you. A big Sorry for this but the sweltering Mumbai Summer heat made me sick with having allergies which made me very tired but now I am all Fit & Fine. Then there was my Hubby’s 50th Birthday of which I was so excited. Hope you guys saw the cake I made for him on my Instagram. So that’s what kept me from posting in a long while.
Since all of us have been holidaying in Summer, we need to eat Healthy for sometime before the Festival Season starts.
SOUPS are my favourite Healthy Nutritious food when I want to go easy on my diet. But we don’t need to have tasteless soups, they can be made so delicious with a little twist here & there. Here We make Healthy Lentil Soup today.
What We Make Today
Today I am going to share the Recipe of MOONGDAL SOUP or YELLOW LENTIL SOUP which has been a favourite for years. This is a Healthy satiating soup made in a different way so that you don’t feel you are having a soup ( as many people think you have soups only when you are sick )
Moong dal or yellow Lentils are nature’s SUPERFOOD according to me. This humble Lentil is full of benefits for the body’s Fitness & Health. I also add some Bottle Gourd to this to add to its benefits.
So here’s the Recipe for this Simple MOONGDAL SOUP / Lentil Soup !!
Ingredients for Lentil Soup
- 1/2 cup moong dal / yellow Lentils
- 1 cup chopped bottle gourd pieces
- 1 small onion chopped fine
- 1 small tomato chopped ( can add more if you want some colour as I have )
- 2 cloves of garlic
- Salt & pepper to taste
For the Garnish
1 cup chopped cabbage sauteed in a little butter
Method of Lentil Soup
Pressure cook all the ingredients without the salt & pepper for about 3 whistles or Boil it for about 25 to 30 minutes.
Blend it in a mixer & then strain it.
Add 2 cups of water.
Heat this in a pan for 2 to 3 minutes, add salt & pepper.
Garnish with the sautéed cabbage, the cabbage gives the twist to this soup.
Serve Piping Hot.
Lentil Soup is also a great option when you are on a diet.
