Vermicelli Thai Soup Bowl
This soup is just so delicious n healthy when you wanna have some kinda one bowl meal, very easy to prepare and awesome dish to impress
You Need:
- I pack of brown rice Vermicelli (can also use d normal one or rice noodles)
- 2tsp olive oil
- 1 zucchini cut into cubes
- 1 carrot cut into cubes
- 1 spring onion chopped fine
- 6/7 cloves of garlic chopped very fine
- 3tbsps of red thai curry paste*
- Salt to taste
- 4/5 cups of water
Method:
In a pan heat d olive oil and add d garlic n thai curry paste n let simmer for 1 min, then add d zucchini n carrots n again let it simmer for 2 min on a slow flame, then add d water n salt n bring to a boil, add d spring onions n boil for 3mins, then add d brown rice Vermicelli n boil again for a min, d Vermicelli will not take longer than 1 or 2 min to cook, n there is ur simple one bowl dish ready to b served.
Red Thai curry paste- mix 2 onions, half a small coconut, 5/6 red Kashmiri chillies, a little galangal/ ginger, 1tsp each of coriander n cumin seeds, a little of lemongrass n blend all together
U can also drizzle some chilli oil on it before serving, so go ahead and enjoy with Always a smile as a smile improves the flavour of food n keeps u healthy
