HANOI is so Rustic, that’s my first thought of this City.. People in Hundreds on Scooters & Scooties, People taking their vegetables , fruits, flowers on cycles, vendors selling food & actually cutting meat on the streets ( a sight which was difficult for me to ignore ) but still Beautiful amongst all this with their Fresh Vegetables , Fruits & Flowers !!!
The Weather in Early March was Awesome especially when we had reached there after the sulterimg Mumbai Heat… Around 18°C to 20°C in the day to a Chilly 10°C in the night, we loved the weather.. The outskirts of the city are absolutely Green with fields all through the way…

Vegetarian food is a bit of a problem in some areas but some of the areas like The Old Quarters & the Lakeside have ample choice & really good ones !! Indian food though could be a problem to find …
I had some Amazing Vietnamese Rice, Noodles, Spring Rolls at different places, each one having their Unique Recipe but all so Delicious..
Today I’ll be sharing My Version of the Famous Vietnamese Noodles known as BANH PHO which are Flat Vietnamese Noodles, their width varies from thin to broad, the broad ones being my favourite.. Made with Rice Flour & Water, they become translucent when cooked..used in Pad Thai & Pho Soup ; these are readily available in the market. But I ll be sharing the method of making these in my Recipe below.
So here’s the Recipe of VIETNAMESE NOODLES..BANH PHO made Vegetarian
1 1/4 cups of Rice Flour
2 tablespoons of cornflour
2 cups of water
1 tablespoon of oil
Salt to taste
Mix the ingredients together in a bowl into a batter, not too thick, nor too thin
Make sure there are no lumps
Boil water in a pan
Grease a heat proof plate / steel plate with oil
Pour a ladleful of the batter in the plate & spread it around the full plate
Place the plate above the boiling water, it should not touch the water
Put a lid on & cook for about 5 to 6 minutes
Remove the plate from the pan
Cut into strips while it’s hot
Cool for around 7 to 8 minutes
Remove the strips, apply some oil to them & keep aside to use later in the Recipe.
You can even make these in a Dhokla Maker as shown in the pics
For the Main Dish
U NEED —-
2 carrots cut into chunks / big pieces
1 small broccoli cut into florets
Some white cauliflower florets
10 green beans cut in half
Few Cabbage leaves torn into pieces
Few Spinach leaves ( can take pakchoy )
2 teaspoon of oil
For the Sauce —-
4 tablespoon of peanut oil
3 tablespoons Garlic paste
2 tablespoons of soya sauce
3 tablespoon of green chilli sauce
1 tablespoon of Red Chilli sauce
2 tablespoons of powdered brown sugar
salt to taste
Heat oil in a pan
Add the carrots, cauliflower, broccoli, beans
Add 2 tablespoons of water, put a lid & cook for about 8 minutes
Now add the cabbage, spinach & cook for 4 minutes
Remove from the gas & keep aside to cool
For the Sauce —-
Heat the Peanut oil in a pan
Add the garlic paste, soya sauce, green & red chili sauce, brown sugar, salt & cook for 3 minutes
Add half the sauce to the steamed vegetables
From the prepared Noodles, add the sauce to half, the rest can be stored in the fridge for about 1 week in an airtight container to be used later
For the Garnish—
Fry some sliced shallots or small onions in oil & keep aside
For the Assembling —
Heat the Vegetables & Noodles separately
Take a fancy plate & place the noodles & Vegetables as shown
Garnish with the fried onions..
Yesssssss, it’s a long Recipe but not that difficult I assure you… Especially worth it when your loved ones will relish every bite, just prepare the noodles one day prior if you wish !!
Serve this Delicious Dish with some clear soup & it cannot get better !!!
