Spring Roll Parcels

Hi all, Diwali is approaching n most of us Indians love to call family n friends over to celebrate the festival together.
So I am posting a recipe which is both delicious and unique and, as usual, delicious as well as easy to prepare.

Let’s get started with SPRING ROLL PARCELS

You Need 

For the parcel

  1. 1 cup All purpose flour (maida)
  2. 1/2 cup cornflour
  3. Salt to taste
  4. 1 to 1 1/2 cup water

( U can also use ready spring roll sheets but i prefer to make them myself as they give their own uniqueness)

For the Stuffing

  1. 1 spring onion chopped fine
  2. 1cup cabbage finely chopped
  3. 1 carrot finely chopped
  4. 1 small zucchini finely chopped
  5. 1/2 french beans blanched n finely chopped
  6. 1 capsicum finely chopped
  7. 6 cloves garlic grounded well
  8. 2 tsp oil
  9. 1 tsp red chilli powder
  10. 1 tsp soya sauce
  11. 1 tsp tomato ketchup
  12. Salt to taste
  13. flour glue;
  14. Take equal amount of flour n water n make a thick paste

For the parcels 

Mix the flour, cornflour, salt n water very well until u get a thin batter, heat a griddle or a non stick pan and pour the batter onto the pan n make small thin pancakes out of the batter. keep them aside on a foil paper or else they tend to stick on the plates

For the stuffing

Heat the oil in a pan, add the garlic, spring onions n all the veggies n let it cook on a fast flame for around 3 min, then add the salt, chilli powder, soya sauce n ketchup n let it cool

Now take one pancake n put 1 tbsp stuffing on it n fold it on all four sides n stick it with the flour glue.

Heat oil in a broad pan n deep fry the parcels till nice golden n crispy, Serve them with Schezwan sauce or the all-time favourite Sriracha sauce.Spring Roll Parcels
If u want u can half fry them n store in the freezer n fry them when you want, they last up to a month in the freezer half fried.
