Now let’s get a little healthy on National Pumpkin Day…
Pumpkin is such a versatile vegetable used in soups ,curries ,also in cakes and Bakes… today I’ll be posting a PUMPKIN SOUP recipe which is such a healthy dish to have for your lunch or dinner with a salad to compensate your Gorging in DIWALI..
For this PUMPKIN SOUP U need—
Ingredients—-
2 cups Pumpkin chopped into pieces
1 cup Milk ( I have used low fat)
2 teaspoon olive oil
3 cloves garlic
1/ 2 teaspoon Italian mixed herbs seasoning
Salt & pepper to taste
Chopped Parsley to garnish
Method—
Heat a nonstick grill pan
Add the 2 teaspoon olive oil
Add the chopped pumpkin pieces & the garlic cloves
Cook on a medium flame for about 10 to 12 minutes till the pieces become soft
Cool the pumpkin pieces & garlic
Add the cooled pumpkin pieces, garlic & milk in a mixer jar
Grind everything well together
Strain the mixture
Heat 1 TSP olive oil / butter in a pan
Add the strained pumpkin mixture
Add half a cup of water
Add salt, pepper, Italian seasoning
Boil it
Switch off the flame
Remove the soup in a serving bowl
Garnish with fresh chopped Parsley.
This is a Super Delicious SOUP, which will satiate your Hunger pangs & also Your Taste buds…
