Oatmeal Muffins Recipe
Of course, we All know Oats! Some of us Love them, some like my dearest hubby simply hate them but they definitely come with a lot of advantages for the body. Today I am posting a Oatmeal Muffins & not Oats Muffins Recipe; Do you know what is the difference ? Let me tell you.
Oats are dry by themselves but when we soak them in any liquid, they have a tendency to soak up that liquid resulting in Oatmeal . This when used to bake muffins gives a much more better texture muffin than the dry oats usually used.
This Oatmeal is Delicious & very healthy to eat especially for your breakfast as it is high on antioxidants, can help lower blood pressure, improve the sugar levels, reduces inflammation, improves the cholesterol levels, is full of iron & vital vitamins & minerals as well as is highly low in calories so great for weight loss & fitness. Phew !!!!!
The trick is to soak the oats in the liquid you are using for at least half an hour for baking. Overnight oats ( which are soaked overnight ) are also a great option for your morning quick brekkie. Just put some fruits, nuts in it & you are ready to go.
The Oatmeal Muffins Recipe that I am posting today is a super Delicious & Healthy option for not only your breakfast but in fact, it can be had any time of the day as a healthy snack too. It has black currants in it which are our Indian Superfood & extremely beneficial to be had in summer as it cools the body ( my love for Indian Seasonal & local ingredients again ) Also the nuts & seeds added to these muffins make it highly nutritious for you even if you are on a diet; as they are high on protein too.
If you think your child won’t eat this ( I think kids have something against oats just like my hubby 😃) put some chocolate or Caramel sauce on it & pack it in their Tiffin & they will happily eat these.

Oatmeal Muffins Recipe Ingredients

1 | Oats soaked | 2 cups |
2 | Milk | 1 and 1/2 Cup |
3 | Coconut oil / Sunflower oil | Half cup + 2 tsp |
4 | Whole wheat flour | Half Cup |
5 | organic brown sugar | 3/4 Cup |
6 | Yoghurt | 3 tsp |
7 | Baking powder | 2 tsp |
8 | Vanilla extract | 2 tsp |
9 | Black currants | 3/4 Cup |
10 | Chopped almonds & walnuts | 3/4 Cup |
11 | mixed seeds ( flax, pumpkin, watermelon) | 3 tsp |
Oatmeal Muffins Recipe Method
Preheat the oven to 180°C
First of all, line a muffin tray with muffin liners
Soak the oats in the milk for a minimum of 30 minutes
Add the baking powder to the whole wheat flour
Take a big Mixing Vessel & add the oil in it
Add in the sugar & beat well with a electric whisk
Add the vanilla extract & yoghurt, beat again for about a minute
Add the whole wheat flour mixed with the baking powder & beat till mixed well
Now add the oatmeal ( oats soaked in the milk ) & beat for 2 minutes
Lastly fold in the black currants, nuts & seeds very gently in the batter with a spatula… The batter will be a little runny
Now fill the muffin liners with the batter only upto half ( or the batter will overflow whilst baking )
Keep the tray in the middle rack of the preheated oven & bake for 25 to 30 minutes
Please check after 20 minutes by putting a knife in the muffin to see if its done as every oven differs !!
As soon as the knife comes out clean, the muffins are ready ( the aroma of these muffins will fill the air )
Allow to cool for sometime if you want to store these or serve them fresh & hot out of the oven .
Dust with some icing sugar or cocoa powder if you want.
If desired add in your protein powder to this Recipe after referring to your Doc … But on its own its a Recipe having protein, carbs, fiber & everything needed for your fitness.
