Making of Red Rice
Hello after long.
But yes, I have got a really Fantastic Recipe for you today which combines the East & West beautifully. I have always stressed that Food has no boundaries so let’s not limit our Food & grow bountiful.
I recently had an Event with the Green People who have introduced their Bakri Chaap Products. As I don’t write about any product unless I have used it, I must tell you that their Bakri Chaap LAL Bhaat was really very good & made a great dish when I used it.
As these products are the outcome of the labour of millions of marginalized small farmers in the remote & higher altitudes of the Himalayas (as they claim) I was really eager to use them & when I did cook this Recipe with their LAL Bhaat I wasn’t disappointed at all, in fact loved the texture & taste !!
I initially made this rice just plain to have with my Gujarati Kadhi but when I tasted it, the texture, the sweetness & the Beautiful creaminess of the Rice instantly made me think of giving it this Mediterranean touch. A cuisine that my brother & Me both love.. so I made this Mediterranean Red Rice which he happily had for lunch at his office.
Red Rice which is so popular down South is full of health benefits. Rich in Iron, Calcium, having a low glycemic index, it is also great for weight loss because of its high fiber content. It has started gaining popularity lately because of the Regional food Boom which was so needed …
Now the Recipe for my Delicious
Mediterranean Red Rice…
Ingredients for Red Rice
- 1 & 1/2 cups Red Rice
- 1 Zucchini
- 2 Ripe Tomatoes
- 8 Garlic Cloves
- Few sprigs of Celery
- 2 tsp paprika or red chili powder
- 1 tsp Italian mixed seasoning
- 2 tsp olive oil
- Salt to taste
- Extra Virgin Olive oil for Drizzle
Wash & Soak the rice in water for an hour.
Dice the Zucchini into medium size pieces.
Cut the tomatoes lengthwise, removing the seeds.
Heat oil in a nonstick pan.
Add the tomatoes, zucchini, garlic & stir fry for 2 mins.
Add the rice & stir fry again for 3 minutes.
Add the salt, paprika & Celery leaves.
Now add 2 & half cups of water & cook with a lid on for about 10 minutes.
After 10 minutes check the rice, if it is done switch off the gas but if not cook for another 5 minutes adding a little more water if needed ( not more than 1/4 cup ).
Remove the Lid & let it cool so that each grain separates well.
Drizzle some Extra Virgin Olive oil.
Garnish with Celery leaves.
The Delicious Mediterranean Red Rice is ready to be served.
