Summer means Mangoes, Lychees, Peaches, Cherries.
These are all my favorite fruit which can be had in all different ways like making juice of it, Mock tails, salads & some yummy desserts.
Summer has its own fresh fruits & vegetables which are to cool the body temperature . Eating Seasonal & Local as I have always insisted will give you all the benefits of this produce.
Lychees have been a favorite with most of us & When I posted an Instastory asking which of the Following Lychee Recipes would you like.
1. Lychee Mocktail
2. Lychee Salad
3. Lychee with Cream
I got an amazing response for all three !!
So instead of one Lychee Recipe, I am posting all three which are as usual quick & easy Lychee recipes.
Lychee Mocktail – Lychee Recipes
- 1 cup fresh Lychee Juice
- I cup soda water / Sprite / Seven Up
- 2 tsp grated fresh ginger
- Juice of 1 lemon
- Some mint leaves
- Crushed Ice
- 1 tsp sugar ( optional )
Mix the lychee juice, grated ginger, sugar, ice, lemon juice in a blender.
Blend it well & then strain.
Add the Soda Water when about to serve.
Pour in a Glass.
Garnish with Mint leaves & Serve !!
- 6 fresh Lychee peeled & deseeded
- Half cup watermelon cubes
- 8 to 10 Rocket leaves ( aurgula leaves )
- Half cup cooked Jowar / Sorghum or Quinoa
- 1 tsp mixed seeds
- 6 blanched almonds
- 2 tsp Virgin Olive oil
- 2 tbsp Sour Cream or Thick Yoghurt
- Juice of 1 lemon
- Salt & Pepper to taste
Stir fry the cooked Jowar / Quinoa in a little olive oil & keep aside
Mix all the ingredients of the dressing in a blender & keep it to cool in a refrigerator
Place all the salad ingredients in a bowl & chill
Mix in the dressing fifteen minutes before you want to serve
I assure you that this Lychee Salad is unlike any other !!
To Cook Jowar or Sorghum, soak in water for at least 3 hours & then pressure cook for 3 whistles till done
Lychees with Cream
- 6 fresh Lychees peeled & deseeded
- 1 cup whipped fresh cream
- 1 tbsp Sour Cream or Coconut Cream
- 2 tbsp vanilla Icecream
- 1 tsp lychee extract
- 2 tsp Rose Syrup ( optional )
- Method —-
Whisk all the ingredients except the lychees & rose syrup
Chill in the fridge for at least 4 hours
Chill the lychees also
While serving, layer first the cream then the lychees, again a bit of the Cream
Top with some Lychees & drizzle some Rose Syrup
If not using Rose Syrup, then add 1 tsp sugar ..
Adding Coconut Cream adds an amazing flavour to this delicious dessert
