Lychee Recipes

Summer means Mangoes, Lychees, Peaches, Cherries.

These are all my favourite fruit which can be had in all different ways like making juice of it, Mocktails, salads & some yummy desserts.

Summer has its own fresh fruits & vegetables which are to cool the body temperature. Eating Seasonal & Local as I have always insisted will give you all the benefits of this product.

Lychee

Lychees have been a favourite with most of us & When I posted an Instastory asking which of the Following Lychee Recipes would you like.

1. Lychee Mocktail

2. Lychee Salad

3. Lychee with Cream

I got an amazing response for all three !!

So instead of one Lychee Recipe, I am posting all three which are as usual quick & easy Lychee recipes.

Lychee Mocktail – Lychee Recipes

Lychee plant

Ingredients —

1Lychee Juice1 Cup
2Soda water / Sprite / Seven Up1 Cup
3Grated fresh ginger2 Cup
4Lemon Juice1
5Mint leaves2,3
6Crushed Ice
7Sugar1 tsp

Method—

Mix the lychee juice, grated ginger, sugar, ice, lemon juice in a blender.

Blend it well & then strain.

Add the Soda Water when about to serve.

Pour in a Glass.

Garnish with Mint leaves & Serve !!

Lychee Salad

Lychee Salad

Ingredients —

1Lychee peeled & deseeded6
2Watermelon cubes1/2 Cup
3Rocket leaves8 to 10
4Cooked Jowar1/2 Cup
5Mixed Seeds1 tsp
6Blanched almonds6
Dressing
1Virgin Olive Oil2 tsp
2Sour Cream or Thick Yoghurt2 tsp
3Lemon Juice1
4Salt & PepperFor Taste

Method —-

Stir fry the cooked Jowar / Quinoa in a little olive oil & keep aside

Mix all the ingredients of the dressing in a blender & keep it to cool in a refrigerator

Place all the salad ingredients in a bowl & chill

Mix in the dressing fifteen minutes before you want to serve

I assure you that this Lychee Salad is unlike any other !!

To Cook Jowar or Sorghum, soak in water for at least 3 hours & then pressure cook for 3 whistles till done

Lychees with Cream

Lychee cream

Ingredients —

1Lychee peeled & deseeded6
2Whipped fresh cream1 Cup
3Sour Cream or Coconut Cream1 tsp
4Vanilla Icecream2 tsp
5Lychee extract1 tsp
6Rose Syrup ( optional )2 tsp

Method —-

Whisk all the ingredients except the lychees & rose syrup

Chill in the fridge for at least 4 hours

Chill the lychees also

While serving, layer first the cream then the lychees, again a bit of the Cream

Top with some Lychees & drizzle some Rose Syrup

If not using Rose Syrup, then add 1 tsp sugar ..

Adding Coconut Cream adds an amazing flavour to this delicious dessert
