Cauliflower Paratha – Keto Delight
Did the word ‘keto’ hear often? Me too but I wasn’t very familiar with this KETO or KETOGENIC DIET till my cute little Friend, Vernika Awal @delectable_reveries started with this diet.
When she started this diet, she was put on a diet regime. Then she told me how it was difficult for a Vegetarian to follow this diet. As there were not many Recipes available for the Keto Diet.
A Keto or KETOGENIC DIET is a low carb, high-fat diet that helps you lose weight by reducing the carbohydrate intake & replacing with fat. This drastic reduction of carbs gets your body metabolism in a state called KETOSIS. When this happens, your body, in turn, burns fat for energy & also turns fat into KETONES in the liver supplying the body with good health & energy.

This is just a short summary of the Keto diet as I understand from the Internet. But when I tried to find some good Vegetarian Recipes, I couldn’t find any. So here’s a Keto Recipe for the Indian Favourite Paratha which I made for Vernika. She was in bliss because she was tired of eating Paneer / Cottage Cheese all the time. This Paratha can be had with your favourite Subji / Vegetable & you will feel satisfied. I have added psyllium husk which is known as Isabgol. It not only acts as a binding agent but is also very beneficial for the digestive system.

Recipe for the Keto Cauliflower Paratha
- 1 cup fresh cauliflower(gobi) grated
- 1 cup grated cheese ( regular )
- 2 tbsp psyllium husk or Isabgol
- 2 teaspoon ginger chilli paste
- 1 tbsp lemon juice
- Salt to taste
- Oil / Ghee to shallow fry the parathas
Add the grated cauliflower, cheese, ginger chilli paste, lemon juice, psyllium husk, salt in a bowl & knead it well into a soft dough.
Now make thick balls of the dough & pat it into a Paratha or like a thick patty as shown in the video.
Heat a non-stick pan, add the Cauliflower Paratha & let it cook well on both sides.
Furthermore, Add the oil or ghee to brown it well on both sides.
And finally the Yummy Cauliflower Paratha is ready to be served, just add a dollop of butter to it !!
Have it with your favourite vegetable or a Hot Spicy Pickle of your choice if you are not on a diet.
Kids will love Cauliflower Paratha if you give them in their tiffin box for school.
This is just a Recipe for Keto Vegetarian Diet followers, I have personally never tried a Keto Diet !!
