Healthy Green Sprouts Curry

Winter is here & with the slight chill in the air, we all tend to feel those Hunger Pangs so often. But the guilt of eating too much of the Rich food always lies heavily on our shoulders as Winter is the time when we indulge the maximum.

Last year I have posted a lot of Winter Recipes for you but when last week I posted a picture of green Sprouts on my Instagram, I got so many people asking me for Recipes. So I thought of posting this Green Sprouts Curry Recipe which is really Delicious along with being Nutritious & full of protein. I love Sprouts especially the Green Mung Sprouts are a favorite of mine & which I usually make at least twice a week.

Sprouts, as we all know, are full of Health Benefits for everyone from the kids to the Adults as they are loaded with fiber, protein, antioxidants & are great for digestion problems. For the Weight watchers they a Boon indeed..

This Green Sprouts Curry also has the healthy Buttermilk & fresh Fenugreek leaves which makes it highly Beneficial as well as Delicious.

Here’s the Recipe for Green Sprouts Curry

Ingredients

Ingredients —

  1. 1 cup Green Mung Sprouts or any other
  2. 1 cup buttermilk
  3. 1 cup finely chopped fresh Fenugreek leaves ( use less if preferred )
  4. 1 onion cut lengthwise
  5. 1 tbsp garlic paste
  6. 2 tsp oil
  7. 1 teaspoon red chili powder
  8. Half tsp turmeric powder
  9. Salt to taste

Method —

Heat oil in a kadai

Add the onion & brown it a little

Add the garlic paste & chopped fenugreek leaves

Add the turmeric & chilli powder along with the salt

Now add the sprouts with 2 tbsp of water & cook for 5 minutes till they become slightly soft

Lastly add the buttermilk & bring to a boil ( if the buttermilk is curdling, just add in a teaspoon of besan / chickpea flour & mix )

Green Sprouts Curry

The Delicious Green Sprouts Curry is ready to be served along with some piping hot Rotis or Rice or with some Jowar Rotis as I love to eat this !!
