GREEN GARLIC TANDOORI ALOO
Lately, I have been posting about my Winter Favourite ingredients…the most favorite of them is Green Garlic which I think is loved by most Indians.
Green Garlic is a superfood by itself having so many health benefits as well as being so full of flavor. When you add green garlic to any dish you do not need to do anything much as the green garlic itself adds a delicious Aromatic flavor to it.. it can be used to make chutneys, can be added to your vegetables, to your Parathas, can be used as a garnish and so on.
Gujaratis wait for the Green Garlic season as they make a lot of preparations using this. The famous Surti Undhiyu is made using this Aromatic ingredient as also many other dishes…
Today I am going to share with you my recipe of TANDOORI ALOO using GREEN GARLIC as a marinade… Let’s say I am doing a fusion of Punjab and Gujarat. Tandoori aloo is a very famous dish from Punjab and I am just adding a twist to this famous dish using green garlic which completely gives the dish its own individuality…
So let’s get started with the recipe…
- 10 baby potatoes
- 6 tablespoon chopped green garlic with the Greens
- One teaspoon green chili paste ( can add more or less)
- 3 tablespoon thick yogurt or hung curd
- 2 tablespoon besan or chickpea flour
- 2 tablespoon oil
- Salt to taste
Peel the potatoes
Parboil the potatoes in a pressure cooker or microwave them in a microwave proof bowl with a glass of water for about 7 to 8 minutes…
Allow them to cool
Mix the green garlic, Chili paste, hung curd or yogurt, besan, oil & salt in a mixing bowl.
Stir thoroughly so that the marinade is mixed well.
Now add the cooled cooked potatoes in the marinade.
Keep aside for an hour.
Heat a Tandoor.
Place the marinated baby potatoes on the Tandoor and cook for about 6 to 7 minutes till they are well Browned
Alternatively, if you do not have a Tandoor, place the marinated baby potatoes in a lined baking dish in the oven which is preheated at 200-degree centigrade and bake for about 10 to 12 minutes till they are well Browned…
If you wish to cook it more easily, just take a grill pan, drizzle a little oil and place the baby potatoes on the pan and let it cook on both the sides till well Browned.
Aromatic Green Garlic Tandoori Aloo is ready to be served…
Serve hot with a chutney of your choice…or simply mix a cup of thick yogurt, 1 teaspoon smoked mustard oil, salt into a dressing & serve the potatoes with it.
I have made these potatoes using a Tandoor but you can opt for any of the options I have given above and you will still get a great dish.
This dish Will Be Loved by not only your family and friends …but kids will love to have this with ketchup or Chili garlic sauce which is their favorite.
