COUSCOUS with Mediterranean Stew


Hi guys, a Special recipe for Saturday nite, make this healthy n yummy recipe for yr loved ones n make them happy!


You Need

For the couscous —

  1. 1 cup couscous
  2. 2 full cups water
  3. 1tsp butter or oil
  4. Pinch of salt

For the Mediterranean Stew—–

  1. zucchini cut into medium sized pieces n stirfried
  2. carrot cut into cubes n stirfried
  3. bunch parsley or 3 stalks celery as u wish
  4. 4 cloves garlic mashed well
  5. 2 onions ground well in d mixie
  6. 2 tomatoes pureed n strained
  7. 1 cup milk or cream
  8. 2 tsp olive oil
  9. 1 tsp red chilli powder or according to taste
  10. 1tsp mixed Italian herbs
  11. Salt to taste


Heat d water in a deep pan n boil, when it starts boiling add d butter n salt n mix in d couscous n stir n turn off the gas, let it stand covered for 10 mins till d couscous has soaked up d water, stir d done couscous with a fork to separate it n so that it doesn’t stick,  let it cool

For the Mediterranean Stew —–

Heat olive oil in a pan, add d garlic,  onions, stir till d rawness evaporates,  then add d tomatoes n cook for 5 min, add d chilli powder,  salt,  herbs n cook for 3 minutes,  then add d milk or cream n cook just till it is all mixed into a sauce,  lastly add all d veggies n parsley n yr stew is ready

U can serve by putting the couscous in d middle of the plate and surrounded by d stew or serve it in 2 different bowls n let people serve themselves
