2018….. Happy New Year !!! Let’s begin the New Year on a Sweet Note…

But 2017… Has been an Amazing year for me when I turned into a Food blogger, A Recipe Developer, A Home Chef…. from a simple Home Maker

It has been a very sweet journey for me right from making new friends and meeting some great Bloggers as also Recipe developers…. I will be shortly writing a blog post on my journey in 2017…

I will be posting a GINGERBREAD cake recipe which uses jaggery powder instead of molasses and also candid oranges to make it more Delicious..

Gingerbread is made mostly in the west during Christmas ,Thanksgiving ..every family has their own variation of GINGERBREAD according to the Recipe coming down the ages….. It is made in the form of a cake or even cookies according to everyone’s taste…

I love Gingerbread cake as well as cookies as they are flavoured with Ginger powder ,cinnamon,cloves and other spices and I feel it somewhere connects to my Indian Taste ….

So today I will be sharing my version of the Gingerbread cake which is both Eggless and Delicious….I have used jaggery powder instead of molasses as not many people are aware of molasses and this also gives it a Great flavour..

So Here’s my first recipe of 2018 which will fill your life with Sweetness and Happiness in the year ahead…..Amen !!

So for this recipe you need —-

Half cup butter at room temperature

Half cup white granulated sugar

Two and a half cups of Maida or All purpose flour

One and a half teaspoon of baking soda

3 tablespoon yoghurt

Three fourth cup of jaggery powder ( you can substitute with half cup of brown sugar if you want )

One and half teaspoon cinnamon powder

One and half teaspoon Ginger powder

Half teaspoon Clove powder

1 teaspoon rum extract

1 cup boiling hot water

Few pieces of candied orange

Method —–

Preheat the oven to 200 degree centigrade

In a large bowl cream together the sugar and the butter



Add in the yoghurt, rum extract and whisk again



In a bowl sift together the flour, baking soda ,cinnamon ,Ginger and cloves powder

Add this mixture into the butter mixture little by little and whisk everything well



Now add the boiling hot water to the above mixture and mix again with the spatula still no clumps remain



Remove the mixture into a lined baking tray


Spread the Candied orange pieces on top, tap the tray

Bake for 30 minutes in the preheated oven until a knife inserted in the centre comes out clean
Allow to cool



When cooled cut it into squares or bitesize pieces as shown in the picture..


The delicious Gingerbread cake is ready to be served, you can serve this with honey…. I also use flavoured honey which I love and which is readily available in the market !!!
