BAKED POTATO WITH BEANS
Been a long time since I posted a Recipe with potatoes n that too BAKED which is a Global Favourite.
Baked Potato can be used in combination with cheese & pasta as in Italian, with beans and salsa as in Mexican or can be had plain with some sea salt and herbs. It is so Versatile in its nature that you can combine it with almost anything you like.
Baked Potato is also very healthy as compared to Fried Potato & has a lot of benefits like it has very low calories, a lot of Vitamin C, potassium, Vitamin B6, also is rich in fibre, magnesium & antioxidants.
I am sharing with You the Recipe of Baked Potato with beans, veggies in tomato sauce but you can always use your imagination.
For the Baked Potatoes
- 2 large jacket potatoes ( big potatoes)
- 2 tsp Olive oil
Preheat the oven to 250° centigrade
Wash and pat dry the potatoes, apply Olive oil all over on the potatoes & put in a tin to bake for almost 50 to 60 minutes till the potatoes are baked well. Put a toothpick in the potato n check whether it is done. Remove from the oven & let Cool.
For the Beans, Veggie stew in Tomato sauce
I can be baked beans/ chickpeas
- 3 tomatoes deseeded n pureed
- 5/ 6 garlic cloves paste
- 1 onion chopped
- 1 Green pepper diced
- 1 red pepper diced
- 1 zucchini diced n steamed
- 1 small broccoli cut into florets n steamed
- 2 tbsp Olive oil
- Salt n red chilli powder to taste
- 1 tsp Italian seasoning
- For the Garnish;
- 2 fresh red chilli chopped ( use dried if fresh is not available)
- Few basil leaves chopped
Method
Heat oil in a broad bottom pan, add the garlic, onion & saute for 2 mins, add the tomato puree, Italian seasoning, salt, Red chilli powder n saute again for 3 minutes until it turns into a lovely red colour
Add the red n green pepper n cook for 1 minute, then add the steamed zucchini n the broccoli n cook for a minute, finally, add the Baked beans n 1 cup of water, let it come to boil n turn off the gas
To Assemble the dish;
Take the Baked Potatoes in a plate, add the stew either on the potatoes or spread around the potatoes
Garnish with the fresh red chilli n basil leaves n Serve Warm!!!!!
U can also serve some Sour Cream with this Dish if U like.
