Aashirvaad Multigrain Atta

I was thrilled as well as skeptical when I received the Hamper from theFBAI with Aashirvaad Multigrain Atta and ITC Kitchens of India pouches of Paneer Malai and Yellow Dal Tadka from Aashirvaad Ready Meals.
Skeptical because I don’t use much of any Packaged Flour or Food… So wanted to see & try the products myself ..but I wasn’t disappointed especially with the Multigrain Atta!!!

An Indian homemaker’s topmost priority has always been providing a healthy and nutritious meal to her family, She understands that a dynamic lifestyle and dietary changes coupled with stressful work schedules means that her family needs added nourishment to combat daily challenges.
The use of multi grains in making Rotis has been an age old practise. Traditionally women go to grain milling Stores to ground different grains for using it with their regular Atta, however when disproportionate quantity of grains is ground with Wheat,the resulting Rotis made from the Atta are dark harder in bite and often bitter in taste- making them undesirable.

As mentioned earlier I myself don’t believe in packaged Atta ; I have a small Atta Grinder wherein I grind my Wheat & make my Own Atta for the Family but when I got the Aashirvaad Atta and I tried the two recipes that I have given below I was assured of its quality and I would definitely use this to make rotis,parathas, naans et cetera for my family especially when the Atta has not only wheat but also the goodness of oats, soya ,Chana, maize and psyllium husk which is what interguied me about this product.
There were also 2 pouches,One of Paneer Malai from KitchensofIndia and the other of Yellow Dal tadka from Aashirvaad Ready Meals which again I tried for the first time as I said earlier I am not too fond of packed products but again I liked the Paneer malai in which the gravy was really good but the Paneer was a bit rubbery and the Yellow Dal Tadka which was nice too.
But for me, My Hero was the Aashirvaad Multigrain Atta with which I am going to try so many different recipes because I loved the Texture , Nutrition Value and the Quality of the product.
So Here I am going to share with you two recipes using Aashirvaad Multigrain Atta.
The first one is a Healthy Naan which are made from the from the Atta; Naan is an all India favourite especially when you are having Punjabi or Mughlai food but the Naans outside are full of Maida or All purpose flour which is not very good to have from the health & nutrition point. So I have tried this Healthy Naan recipe which turned out to be super, it is very soft and also quite Crisp from outside , its texture is a little different from the Maida Naan but if you have to make it at home for your family it’s just perfect.
The second recipe is A Zucchini Cake Bread with Raisins , Walnuts Sans Any Butter.
I have used olive oil instead of butter and organic sugar instead of regular sugar to make it more healthy but it does not mean that is not delicious ; the BreadCake texture because of the Multigrain Atta is simply awesome and I have become a fan of this Aata and am sure to be using it in many more of my baking.
Recipe for the Naan
Ingredients
- 4 cups Ashirwad multigrain Atta
- 2 teaspoon instant Yeast
- 2 cups warm milk
- 1 cup water
- 2 teaspoon sugar
- 3 tablespoon minced garlic
- One fourth Cup butter room temperature
- 2 teaspoon onion seeds or Kalonji
- Salt to taste
Method
In a bowl add flour, salt, sugar, yeast and mix them well.
Now gradually add milk little by little and water.
Knead it into a soft dough.
Cover and rest for 2 hours till it is double the size.
After the dough has risen punch the dough and knead again for 5 minutes.
Divide the dough into equal parts ,take one part and roll with the Rolling pin into a circle, alongate one side of the circle into the form of a Naan.
Take a kadai and put it inverted on a medium gas flame.
Put water on one side of the Rolled naan , add the kalonji ( it will stick to the naan) and put it on the inverted kadai.
When the side that is sticking on the kadai starts cooking you ll see bubbles on the Naan, turn it around and cook on the other side till it is cooked well and dark brown spots appear.
Make sure that the Naan is cooked well and is not under cooked
Mix the room temperature butter and minced garlic and put it in a small bowl
Apply this mixture on the cooked Naans and Serve hot with any gravy or Dal of your choice..ITC KitchensofIndia has so many choices.
You can also make it like a regular paratha on a frying pan but I like to make it this way as it gives a very restaurant look to the Naan
U can also bake them in a preheated oven at 200 ° centigrade for around 7 to 8 mins
So go ahead and tried making this beautiful Indian bread.
Recipe for Zucchini Multigrain Bread
Ingredients
- 2 cups Aashirvaad multigrain Atta
- 1 cup organic sugar or half cup white granulated sugar and half cup Brown damerera sugar
- Half cup olive oil
- 1 cup Yoghurt
- One teaspoon baking soda
- One teaspoon baking powder
- One teaspoon Vanilla extract
- Half teaspoon cinnamon powder optional
- One and a half cup zucchini grated
- Half cup walnut pieces small or big as you prefer
- Half cup black raisins
- 1/4 teaspoon salt optional
Method
Preheat the oven to 200 degree centigrade.
Take a bread tin & line it well with parchment paper.
Mix the multigrain Atta baking powder, baking soda, salt , cinnamon powder in a bowl.
In another bowl take the olive oil ,add both the sugars, Vanilla extract , Yoghurt and whisk with the handwhisk, till it is all mixed well.
Add the flour mixture little by little and whisk it well again.
Add the grated zucchini to the mixture and mix it well with a spatula.
Add the walnuts and the raisins and mix well with the spatula again.
Remove the mixture in the already prepared Bread tin, add a little raisins on the top of the batter as it looks very beautiful.
Put the tin in the oven to bake for around 50 minutes , it could be a little less or a little more as oven temperatures tend to vary so keep checking after 40 minutes, the best way to check is to insert a knife in the cake and if it comes out clean then your cake is done
